1 head cauliflower
2 tablespoons olive oil
1/4 teaspoon pepper
1/2 cup Parmesan cheese (shredded)

Heat oven to 450°F.
Remove outer leaves of cauliflower. Cut florets off the stem. Wash and drain.
In a large bowl, combine oil, salt, and pepper. Add cauliflower florets and toss to coat.
Spread cauliflower in a single layer on a large rimmed baking sheet.
Roast in the oven until the cauliflower starts to soften and begins to brown (15-20 minutes).
Sprinkle cauliflower with cheese and roast another 5-10 minutes.
